In this month’s issue of Cook’s Illustrated they had a little tip about regrowing your used scallions. Being the skeptic and black thumb that I am, I wasn’t real sure what to expect. But I tried it and it worked. Of course now I think I can grow anything and have visions of an entire hydroponic garden, but we’ll probably keep it small limiting it to onions and herbs.
To grow these suckers, I just left the base (the white part) in tact with roots, put them in a jar of water, changed it daily and watched them grow! The magazine says the roots are good for just about one regrowth. I can’t wait to cook with them and see how they taste.
